root.sh: Drop luks fixup

Guido Gunther requested to merge guido.gunther/image-builder:drop-luks-fixup into master

librem5-devkit-tools dropped hardcoding the root device so no need to fixup anymore.

This should unbreak the currently failing luks builds (https://arm01.puri.sm/job/Images/job/Image%20Build/7781/consoleFull) - i havent tested flashing this yet but my device boots fine without it.
