gitlab-ci: Build wlroots

Build it once with and without xwayland so we're sure both work

Why not make both builds independent and in the same stage?

Since it would mean installing the build-deps twice for a 2 second compile, I'd rather safe the time.

I'm not very fond of mixing two different builds because it will not be immediately clear which build triggered a failure. But at the same time, do we need to support xwayland in the short term at all?

I've splitted the pipelines since we really want to make sure we can build with xwayland to test in outside the phone.

You probably don't mean that, but to make sure, it's not X backend you're thinking about?
